Rosella KPT is a sister to the East Village NYC spot, and it shows. Chef Matt and his team work an open counter, smoking and dry-aging fish in-house before turning it into sushi and small plates. You'll sit elbow-to-elbow with locals and visitors who came specifically for the nigiri. Winter's actually the sweet spot to go, when it's not mobbed.

What to order
Start with nigiri, full stop. The smoked trout has a line behind it. Smoked eel on ramen is worth ordering twice. Hit the spicy avocado roll, then ask what's off-menu that day. One guest said they'd usually be hesitant about certain things, but trusted the staff and weren't let down. The house-made soy sauce alone justifies the trip.
